Salumificio Leoni of Reggio Emilia was awarded the ‘Superior Taste Award 3 gold stars’ for its ‘Prosciutto Cotto Nazionale Gran Leoni Regio’ Cooked Ham and the ‘Superior Taste Award 2 gold stars’ for its ‘Culatello Nazionale Arrosto Cuor d’Oro’ by the International Taste & Quality Institute in Brussels. This independent organization is recognized worldwide for both tasting and promotion of food and drink characterized by superior taste.
‘Regio’ national Ham is a completely new and innovative product, prepared with raw material entirely coming from Emilia-Romagna, which will soon enter the market. Its decoction (cooking broth) is produced with fresh fruit and vegetables. ‘Culatello Cuor d'Oro’ is realized with the noble part of the fresh deboned leg of pork, that is left to hang for a long time, tied by hand and flavoured outside with spices and natural flavours. Both products have no polyphosphates, gluten and dairy products, are vacuum-packed and thermally treated in an autoclave.
- The jury of the Institute consists of 65 star chefs of 32 nationalities. The Superior Taste Award is based on blind assessment, which therefore primarily focuses on the intensity of gustatory pleasure.
The company
Salumificio Leoni was established in 1960, is specialized in the field of cooked ham, with an average annual production of over 200 thousand pieces (about a thousand a day) and a turnover of 10 million Euros, about 15% of which concern export. Leoni is one of the companies which a few months ago were authorized by the Chinese authorities to export cooked salami and cold cuts in China. Its production is marketed in the whole Horeca sector and industry.
