During SIGEP (23th-24th January) Denis Lovatel presented his latest creation, awarded Best Tasting Pizza in the Guide of Italy Pizzerias of the 2017 by Gambero Rosso.
During the fair dedicated to ice cream, pastry and bread, pizza chef Denis Lovatel of the Pizzeria da Ezio provided an exclusive tasting of his Pu'er pizza, created by the inspiration of the pizza chef himself in collaboration with Francesco Brutto, chef at the Undicesima Vineria (Treviso).
The Pu'er is a white pizza stuffed with mozzarella, baked topinambur, chips, black cabbage juice and infusion of Pu'er (a 1998 fermented rare Chinese tea that gives the pizza a balsamic taste).
The creation was the first designed for the In-fusioni format, a research project where, for 12 months, 12 chefs of national and international fame took turns alongside Denis Lovatel to create limited edition tasting pizzas with exceptional ingredients.
