Fifty members, who represent 98% of the entire production. These are the numbers on which the newly formed Consortium IGP Balsamic Vinegar of Modena can rely on. In 2012 the production recorded 90 million liters, more than 90 % sent abroad, for a total market value of about 600 million euro. The Consortium , which will be operative in 2014, has already a president: Stefano Berni , currently general manager of the Consorzio Tutela Grana Padano, called to lead the fourth pole for Italian agribusiness value and the first for export.
Balsamic Vinegar IGP differs from the traditional DOP because it can be produced from the must and wine vinegar (while the DOP only from the must) and has a minimum aging time in barrel of 2 months compared to the 12 years of the DOP. Either version of DOP and IGP has become popular product in over 100 countries , thus exposing to a growing phenomenon of counterfeiting.
The new Consortium will lead a supervisory action on the domestic market and a strong cooperation with the European Institutions for the respect of the Community rules on products with designation of origin.
